Ingredients

    2 baked or boiled potatoes
    1 Tbsp finely chopped onion
    1 stalk celery, finely chopped
    1 small bunch of roquette, chopped
    (can substitute parsley, basil or other fresh herbs)
    dash of garlic powder, salt, pepper
    1tsp olive oil
    1 Tbsp cider vinegar

Directions

Boil potatoes and cool. Peel
Cut into bite sizes
add all ingredients and mix
Serve cold
