Introduction

Ingredients

    4oz pack of Shiratki Tofu Noodles (fettucine size)
    Chunk Lite Tuna in Water
    1 cup Walden Farms Alfredo Dressing
    2 cups fresh broccoli (cut into flowerets)
    1 Cup Fresh Zucchini
    1oz Blue Cheese
    Salt (to taste)
    1 tbsp Basil
    1tsp Garlic (or to taste)

Directions

1) Parboil the 4oz package of Shiratki noodles in a medium sauce pan for 3 min.
2) Drain the noodles and leave them on low heat, stirring occasionally and cut the noodles as necessary (they are very long!)
3) Drain the Tuna and add that, the garlic and basil to the cup of Walden Farms Alfredo dressing. Mix well and set it aside.
4) Wash the broccoli heads and chop into small-medium sized flowerets with a portion of their stalk still attached.
5) Wash the zucchini and chop into circles, then halve the circular pieces. You should have 1 cup of semi circles of zucchini!
6))Spray a wok or stir fry pan with non-stick cooking spray (Pam or other non calories brand) and put over light heat for about 1 minute.
7) Add the broccoli to the pan and stir fry for about 5 minutes or to your desired consistency ( I like mine firm)
8) Add the mixture of Tuna and Alfredo sauce to the noodles and put on medium heat. Stir frequently.
8) Next, add the zucchini to the broccoli stir fry pan
and cook for about 4 minutes.
8) Before the zucchini is fully cooked, add the broccoli and zucchini from the stir fry pan to the noodles mixture in the sauce pan.
9) Mix all ingredients together over medium heat and add salt to taste.
10) Add the blue cheese to the top of the mixture as the very last step and cover for 1minute over low heat to let the cheese melt.
11) Remove from heat, dish up 2 plates and enjoy the creamy goodness!

This recipe makes 2 servings. The shirataki noodles are tofu noodles so they are sugar free, low carb and 100%vegan. You can substitute other veggies or other types of cheese. The Walden Farms Alfredo sauce is calorie, sugar, and carb free, so if you'd like creamy casserole, you can add more Alfredo sauce! Feel free to add additional spices to your preference!
