Introduction
Not a whole lot different. I'm simply keeping track of this recipe and updating as I improve it.I cooked this in a slowcooker. I'm sure it could be prepared in the same manner and baked. I'd start with the oven at 350 degrees for 30-45 minutes. Checking it at 30 minutes. Also depends on how big the chix breasts are. Not a whole lot different. Ingredients
-
2 pounds of chicken breasts
1/2 jar of Pace Salsa
1 cup of chicken broth made from bouillon
2 Tbsp Chili Powder
1 tsp Onion Powder
1 tsp Garlic Powder
.25 tsp Cayenne, Red pepper
1 can of Black Beans
1 can of corn kernals
1 can of green chiles
Directions
Add chicken to the crockpot. Mix the chili powder, onion powder, garlic powder and cayenne together. Coat all sides of the chicken (may have some left over). Pour salsa over the top. Add bouillon broth. Cook in the crockpot. I sat mine for 8 hours and the chicken was cooked in 6.
After the chicken is cooked, it can be shredded if you like. Then add the black beans, corn and chiles to heat through. Rice can be added the last 25 minutes (depending on the cook time for your rice).
This would be good in a tortilla, on a salad, or over rice. Many ways to eat it.
