Ingredients

    4 boneless, skinless chicken breasts, 2 cans diced tomatoes, 1 packet taco seasoning

Directions

Place breasts in crockpot. Cover with tomatoes and seasoning. Cook on high for 2-3 hours or low for 6. Shred meat with a fork and enjoy! Freeze what you don't use. Can also add black beans and corn - but be sure to add the calories accordingly. You can also use Rotel tomotoes, or just add some diced chilies to the regular tomatoes if that is all you have for a nice kick.

    Very Good
    This stuff is great and it's so easy to make. I tossed the chicken breasts and the taco seasoning in a zipper bag and coated it before I put it in the crockpot with the tomatoes. Flavor is rich, but not overly spicy. Only downfall is how soupy it is. Makes for soggy tortillas & saucy elbows. - 2/8/10
