Ingredients

    1 pound top loin boneless chops, fat removed, largely diced
    2 large onions, diced
    2 large apples, diced
    4 cups saurkraut with juice
    1 tbsp caraway seed
    1 tbsp olive oil
    5 garlic cloves, pressed
    4 tsp brown sugar
    2 tbsp pepper

Directions

Cube chops, sprinkle with pepper and saute cubes in olive oil in dutch oven until browned, add chopped onions and pressed garlic until translucent.
Add Sauerkraut, apple slices, caraway seed, brown sugar and pepper, mix thouroughly.
Let simmer for about 3 hours, stirring occasionally until pork is falling apart.
Makes about 16 1/2 cup servings
