Ingredients

    2 (8oz) bonless chops
    3 tbsp. butter, divided
    1/4 lb. fresh mushrooms
    1 tbsp. lemon juice
    1/2 med. onion, diced
    small garlic clove, minced
    1/8 cup all-purpose flour
    1/2 tsp. salt
    1/8 tsp. tarragon
    1/2 can condensed beef broth

Directions

In lrg. skillet, brown chops in 1 tbsp. butter on both sides. remove and keep warm. toss mushrooms in lemon juice. in same skillet, saute mushrooms, onions and garlic in rest of butter until tender. stir the flour,salt and tarragon into the skillet until blended. gradually stir in broth, scraping brown bits from pan. return chops to pan; bring to boil. reduce heat; cover and simmer for 20-25 minutes or until meat is tender. (1 serving is 4 oz. of meat) 4 servings
