Ingredients

    2 cups jasmine rice (1 cup uncooked)
    1/4 cup water
    2 tablespoons less-sodium soy sauce
    2 tablespoons oyster sauce
    2 teaspoons rice vinegar
    2 teaspoons extra virgin olive oil
    1 pound chicken cutlets cut into strips
    1 cup red bell pepper strips
    1 cup frozen shelled edamame (green soybeans)

Directions

prepare rice per package directions. while rice is cooking combine water and next 3 ingredients in a small bowl and whisk. Heat oil in a large nonstick skillet over medium high heat. Add chicken and cook 6 minutes or until browned. Add bell pepper strips and edamame and cook until crisp-tender, stirring frequently (about 3 minutes). Add soy sauce mixture and cook 1 minute stirring constantly. Serve over 1/2 cup rice.
