Introduction

This is a very quick, really yummy (and somewhat healthy) recipe. You get just a bit of zip from the jalapeno artichoke dip, and the flavor combination of guacamole, muenster, and the roasted dip is awesome. Let me know if you like it! Ingredients

    (8) Chicken Tenderloins
    (2) Peeled, pitted avocados
    (1) Packet avocado mix
    (4) Slices Muenster cheese, cut in half length-wise
    (1) small tub jalapeno artichoke dip

Directions

Preheat oven to Broil. Pan-fry the chicken tenderloins with non-stick spray until done. Do not overcook (as tempted as you may be). Just before chicken is finished, place a 1/2 slice of Muenster cheese onto each tenderloin and let it melt. While chicken is cooking, peel, pit, and mash two avocados into a bowl and mix with guacamole seasoning. Place all tenderloins onto a cookie sheet (be sure to use cooking spray first). Spread a layer of jalapeņo artichoke spread across the Muenster cheese. Broil the tenderloins with the cheese and spread on top until golden brown. Serve hot with avocado mix on the side or on top.
