Ingredients

1) Potatoes - peeled, boiled and chopped - around 6
2) Onion - 1 large, chopped
3) Tomato - 1 medium, chopped
4) Carrom seeds - 1 tsp
5) Cumin seeds - 1 tsp
6) Spinach leaves - 1 bunch, wash and chop into smaller pieces
7) Coriander/Cilantro leaves - a few sprigs, wash and chop
8) Salt - 1 tsp
9) Red paprika powder - 1 tsp
10) Garam Masala - 1 tsp
11) Tumeric - 1 tsp
12) Olive oil - 1 tsp
Directions
1) Boil, peel and chop the potatoes into 1" cubes
2) Chop the onions, spinach, tomatoes and cilantro leaves
3) Heat 1 tsp of olive oil, add the carrom and cumin seeds and saute. The carrom seeds is used to counteract the gas produced by the potatoes.
4) Add the onions, salt, tumeric, garam masala and paprika powders and saute
5) Add the tomatoes and saute till they turn soft.
6) Add the boiled potatoes, stir and leave for about 5 minutes
7) Add the spinach and cilantro and stir. Let it cook for around 10 minutes. The spinach leaves reduce in size as they cook.
This makes around 8 servings (1/4 cup).
