Introduction

Pumpkin boiled and mashed is a popular vegetable in the Caribbean. In Trinidad it is also cooked slightly curried.

This is how I cook it at home.
Pumpkin boiled and mashed is a popular vegetable in the Caribbean. In Trinidad it is also cooked slightly curried.

This is how I cook it at home.

Number of Servings: 4

Ingredients

    3 cups of raw pumpkin,
    1 tbsp minced garlic
    1 tbsp curry powder
    black pepper (to taste)

Directions

Cut off the rind of the pumpkin and dice it (about 1/2 inch cubes). Put in a medium pot and add minced garlic, curry powder and black pepper to taste.

Add 3/4 cup of water and mix well.

Bring to the boil, lower head to medium and cook until tender.

Mash well and serve.

Makes 4 1/2 cup servings.

    Very Good
    This was excellent, I had some pumpkin left over when I was making a pumpkin cheese cake, so I thought I'd try this. I didn't have quite enough of the pumpkin that the recipe asked so I added yams as well. It was fantastic!! - 4/4/10
