Number of Servings: 4

Ingredients

    1 large, whole chicken breat, cut into bite-sized pieces
    salt & pepper
    1 tbsp. canola or vegetable oil
    1 med. yellow onion, finely diced
    1/4 cup peanut butter (preferrably organic)
    1/3 cup chili sauce
    1 cup water
    1 med. red bell pepper chopped
    handful of peanuts
    2 cups of rice- cooked

Directions

Makes 4-6 servings
-Sprinkle Chicken with salt and pepper, heat oil over med-high heat in a large pan
-Saute chicken until lightly browned on all sides and just opaquue throughout
-Place chicken on a plate, saute onion until softened in chicken drippings
-Once onion is soft add peanut butter and chili sauce to pan, reduce heat to medium
-gradually stir in water until peanut butter is melted and sauce is fully blended
-add chicken back to pan until mixture heats through
-Serve chicken and sauce mixture over rice, topped with bell pepper and peanuts

    This is really yummy, & definitely easy! I used 6 organic chicken thighs & increased the other ingredients proportionately. No Heinz chili sauce at my grocery, so I combined a can of diced tomatoes & jalapenos w/a couple of dollops of Asian chili-garlic sauce. Real comfort food! - 12/30/13

    Wow thank you, we can't eat chicken because of allergies so I substituted with a lean read meat. Wonderful the whole family added to the make again and often list. Thank you for a taste new dish. - 2/10/11
