Introduction

I loved the pizza bake idea from the Bisquick Smart Start box, but there is a problem.... I'm vegetarian.... no chicken for me!

So, I made some adjustments, doubled it, added some things, and it turned out very well. I made it for three, with a salad, very satisfying, and kept my non-veg boyfriend rather happy. If you're a big eater, then make it for 2.

Ingredients

    2/3 cup Bisquick Heart Smart mix
    1/4 tablespoons fat-free egg product or 2 egg whites
    2 tablespoon water
    1/2 teaspoon garlic powder

    2 links Lightlife Smart Sausages, Italian style
    1/2 green or yellow bell pepper, chopped
    4 baby portobella mushrooms, sliced
    1/2 onion, chopped
    2 teaspoons garlic
    1 14.5 oz can diced tomatoes with Italian-style herbs, drained
    1/2 teaspoon Italian seasoning
    Salt and Pepper

    3/4 cup shredded reduced-fat mozzarella cheese
    2 tablespoons freshly grated parmesan
    Italian seasoning

Directions

Heat the oven to 400F.

In a mixing bowl, combine the Bisquick, egg product, water, and garlic powder. Spread into a greased 8x8 pan, and set aside.

Spray a non-stick pan a bit, and over medium high heat, brown the sausages, then add the peppers, mushrooms, onions and garlic. Saute for around 10 minutes, then add the drained tomatoes. Increase the heat, and allow any excess liquid to cook off. Gently spoon over the batter, and top with mozzarella, parmesan, and Italian seasoning. Bake for 20-25 minutes until cheese is browned and crust is golden. Cut into six slices, nutritional info is for 1 slice.
