Ingredients
-
MACAROONS:
2/3 cup sweetened condensed milk
1 egg white
1-1/2 tsp vanilla extract
1/8 tsp salt
3-1/2 cups shredded coconut
DIP
10 ounces (280 grams) milk chocolate
Directions
Preheat oven to 325F/160C. Grease a cookie sheet.
Mix together sweetened condensed milk, egg white, vanilla, and salt until blended. Add coconut and stir til thoroughly mixed.
Drop spoonfuls of mixture onto cookie sheet about one inch apart. Wetting fingers regularly to keep from sticking to the mixture, shape the spoonfuls into "haystacks."
Bake 15-20 minutes or until golden brown. Allow to cool at least 5 minutes on the sheet until transferring to a cooling rack. Macaroons should cool at least 30 minutes before dipping in chocolate.
Melt chocolate in a heat-proof bowl placed in an almost-simmering saucepan of water. When chocolate is smooth, remove and begin dipping macaroons. Gently grasp one side, dip the other half in chocolate, scrape away the chocolate at the bottom, and place the cookie on a pan that can be placed in the fridge or freezer. Dip all cookies and allow the chocolate to set in fridge or freezer for at least 15 minutes, then enjoy!
Makes 36 cookies.
