Pumpkin Muffins that are high in fiber! Pumpkin Muffins that are high in fiber!
Number of Servings: 4


    1 Cup+ 2 tablespoons of whole wheat flour flour
    2 Tablespoons of brown sugar
    1 Teaspoon of ground cinnamon
    1/2 Teaspoon salt
    1/2 Teaspoon baking powder
    1/4 Teaspoon baking soda
    2 Eggs
    1 Cup WARM Milk ( used 1% in this one)
    1/2 cup canned pumpkin(without salt)
    2 Tablespoons of MELTED Butter (unsalted)


Mix all dry ingredients first. Then add warm milk, and then melted butter. mix all together. cook on waffle iron according to manufact. directions. Enjoy! *** using warm milk and melted butter gives the waffle a crispier texture. If you don't care for it then don't warm or melt it.
