Number of Servings: 3

Ingredients

    2 cups macaroni, whole-wheat
    3 oz light processed cheese product
    2 tsp margarine, soft
    1 cup onions, chopped
    1 cup mushrooms, pieces or slices
    1/2 cup green peppers, chopped
    3/4 cup ham, extra lean, diced
    1/4 cup milk, nonfat
    1/4 cup white wheat flour, all-purpose, unenriched
    1/2 cup fat free chicken broth

    Spices:
    Nutmeg
    Pepper
    Cinnamon

Directions

Cook macaroni according to instructions.
In a large skillet, melt margarine. Add fresh ground pepper to taste.
Add onion and green pepper and saute until it begins to carmelize.
Add 1/4 cup chicken broth and mushrooms. Cook until mushrooms are mostly done.
Add rest of chicken broth and enough flour to make a rue (a runny paste-like consistency).
Add a dash of nutmeg and a dash of cinnamon.
When rue begins to smell nutty and turn a darker color, whisk in nonfat milk.
Feel free to use more milk if you want to stretch the sauce further. Cook until sauce begins to thicken.
Add cheese and simmer until completely melted.
Toss in macaroni and transfer to a baking dish.
Bake at 350* F for 20 minutes until golden brown.
If you have extra calories, you can add a breadcrumb topping to this by tossing 2 tbsp fat free parmesan topping and 1/4 cup breadcrumbs together with some seasonings and sprinkle on top to bake. Delicious either way!
