Ingredients

    1 1/2 c. brown lentils
    2 c. apple juice, unsweetened
    2 t. fresh ginger root, grated
    2 c. water
    1 c. chopped onions
    3 cloves garlic, minced
    1 c. carrots, diced
    2 t. canola or vegetable oil
    1 c. bell pepper, diced
    1 1/2 c. zucchini, diced
    1 c. tomato, chopped
    2 T. soy sauce
    2 T. rice vinegar

Directions

Rinse the lentils. Combine them in a saucepan with apple juice, ginger, and water. Bring to a boil, then lower the ehat and simmer, uncovered, 30 - 40 min. until lentils are tender.

While the letnils cook, saute the onions, garlic and carrots in the oil for about 5 min. until the onions bethin to soften. Add the bell peppers, zucchini, and tomatoes. Cover and cook on low heat for about 10 min., until just tender. Stir in the soy sauce and vinegar.

When lentils are ready, combine them wiht the vegetables. Serve on rice. Serves 6
