Ingredients

    4 cups seeds and nuts: I use some variation of the following depending on what I have/what's on sale,etc. almonds, walnuts, pecans, filberts, pumpkin seeds, sunflower seeds. use whatever you like.

    I buy them raw in the bulk section and roast them on a baking sheet for 10-12 minutes at 325 degrees

    10 cups thick cut rolled oats (I buy bulk)
    2 Tbsp cinnamon

    Syrup:
    3/4 cup vegetable oil
    1/2 cup honey
    1/8 cup blackstrap molasses
    1 Tbsp vanilla extract
    1 tsp almond extract

Directions

1/4cup serving sized

If you bought raw nuts roast them and if you like chop them. (I like them whole )

mix the oats with the cinnamon (I use 2 tablespoons, but you might only want one.

Add nuts to oats and mix.

Make the syrup:
Mix and warm the oil, honey and molasses, but not to hot or it will harden into candy. When it's warm add the vanilla and almond extracts.

Add the syrup to the nut and oat mixture and stir until thoroughly mixed. Spread out on 2 baking sheets.

cook 15 minutes at 325 degrees. Switch around if the oven is uneven and cook 5 more minutes. Store in an airtight container (goes stale very quickly if left out).

The serving size is 1/2 cup - I put it in a cup of Lucerne Light yogurt for breakfast.

I make this recipe exactly as the friend who gave it to me.. but I am going to start playing around with reducing the amount of canola oil to reduce calories... if it works I will come back and alter the recipe : )
