Ingredients

    Muffins:
    1 3/4 Cup flour
    1/3 Cup sugar
    2 tsp baking powder
    1/4 tsp salt
    3/4 Cup nonfat milk
    1 large egg
    1/4 Cup canola oil
    1/4 tsp dried lemon peel
    3/4 Cup fresh blueberries

    Streusel Topping:
    3 Tbsp flour
    3 Tbsp brown sugar
    2 Tbsp butter

Directions

Preheat oven to 400 degrees.

Mix flour, sugar, baking powder & salt in medium bowl.

Mix milk, oil & egg in small bowl

Combine milk mixture in flour mixture until moistened.

Fold in lemon peel and blueberries.

Divide evenly in 12 muffin cups.

Mix streusel topping in small bowl until coarse crumbly mixture. Divide evenly among 12 muffins.

Bake muffins 18 - 20 minutes. Cool in muffin pan on wire rack for 5 minutes before removing from pan.
