Quick, filling and nutritious salad or side dish Quick, filling and nutritious salad or side dish
Number of Servings: 4


    Package of Trader Joe's frozen Soycutash (mixture of edamame beans, corn and red peppers) or just use a package of frozen edamame.
    2 cups cooked brown rice (I use the frozen packs at Trader Joe's)
    Salt and pepper to taste
    2 TAB lime or lemon juice
    2 TAB rice vinegar
    3 tsp. sesame oil
    1 tsp. sugar


Microwave rice and frozen vegetables until thawed, then combine and sprinkle with a little salt and pepper. Combine dressing ingredients and whisk together in bowl. Pour over rice/veggie mixture and toss lightly. Can be served hot or cold. Delicious!
