Ingredients

1 large Onion
1bulb Garlic (12 cloves)
Salt (1 tsp)
100 ml Olive Oil (7tbsp)
900g Green Beans (snap)
200g Napolina Double Concentrate Tomato Puree (whole tube)
Pepper and Chilli powder to taste
Directions
Chop onion, and peel garlic, crush half the garlic, reserving the remaining cloves.
(I crush the garlic by chopping it, adding salt and pounding it. The salt helps soften the garlic)
Pour the olive oil in a large saucepan, add the onion, and cook gently over a medium heat until the onions are soft. Add the crushed garlic.
Top and tail the beans and cut into 1inch pieces, add to the pan with a couple of pints of water. Add the tomato puree and stir until fully dissolved.
Simmer for about half an hour. Half way through cooking add the reserved whole garlic cloves.
Serve on a plate with pitta bread.
Makes 6 300g servings
This can also be served cold, or a smaller serving can serve as a lunch.
Can also be served with rice.
The calorie counted serving is without bread or rice for a 300g serving
