Ingredients

    1 13.25 Oz can Mushrooms
    1 15 oz. can Pumpkin
    1 28 oz can Diced Tomatoes, With Basil, Garlic & Oregano
    1 can 26.5 oz Black Beans
    1 11 oz can Green Giant Mexicorn
    32 oz Vegetable Broth
    2 1/2 cups water

Directions

Cook in a large pot over medium heat for about 1 hour.
It makes about 10 1 cup servings.

    I love this soup. I use fresh mushrooms and add fresh carrots, celery and onion and part of an adobo pepper as well for flavour. I have this soup every week, its just that good. It makes a ton and keeps very well in the fridge and tastes great cold. - 5/26/10

    Good soup. Better if you add jalepino or cayenne pepper. I also added carrots and celery to it. - 11/12/10
