Ingredients

    8oz cubed beef
    1 1/2 cups of cauliflower florets
    2 cups of chopped kale
    1 medium onion chopped into about 1 inch pieces
    4 medium red potatoes chopped into 1 inch pieces
    1 cup sliced okra
    1 cup chopped yellow squash
    1/2 cup cooked chickpeas
    1 28oz can of crushed tomatoes
    1/2 cup of stock (your choice)
    1 tbsp paprika
    1 cup reduced fat sour cream
    salt and pepper to taste

Directions

- Combine all ingredients EXCEPT for the sour cream in the crockpot.
- Cook on low for 7 hours
- Stir in sour cream about 10 minutes before serving
- Enjoy!
