This is a fairly healthy truffle recipe. You can cut the agave in half and it will still taste fine. Ingredients

    1 cup raw walnuts or other nuts
    1 cup unsweetened coconut plus 1/4 for rolling truffles
    1/4 cup raw agave syrup
    1/4 cup organic virgin coconut oil
    1/4 cup hemp protein powder
    1/3 cup organic cocoa powder
    1 teaspoon vanilla
    pinch of unrefined salt

Directions

Place the nuts and coconut in a food processor and process until finely ground. Add the rest of the ingredients and process until smooth. Roll into 16 truffles and roll each in coconut. Truffles will be very soft so refrigerate them for a firmer texture.
