Ingredients

    1 large egg
    1/2 c. cottage cheese
    1 1/2 c. buttermilk
    1 cup self rising flour
    1 cup berries

Directions

Whisk egg, cottage cheese and buttermilk together. Add flour (the original recipe calls for 1 1/4 cups, but that is too dry for me). Chop or slice strawberries (original recipe calls for blueberries but I am allergic to them--I have used blackberries as well as peaches in this recipe) and stir them in.
Heat skillet or griddle. Spray with cooking spray or lightly coat with oil. Cook til brown on the bottom, flip and cook other side.
Depending on how sweet the berries are, you may or may not need syrup.
Makes 8-12 4" pancakes
