Ingredients

    1 tbl olive oil
    1/4c diced onion
    1 garlic clove, minced
    1c red pepper, seeded and thinly sliced
    1c sliced mushrooms
    1c drained canned italian tomatores, chopped and seeded
    1 tsp dried basil
    6 oz shrimp
    1/2 oz pine nuts lightly toasted
    2 tblspn half & half
    Dash salt, pepper
    2 cups cooked fusilli or similar pasta

Directions

In skillet, combine oil, onion and garlic and saute for 1 minute. Reduce heat and add red pepper, mushrooms-saute til soft. Add tomatos and baset bring to boil stirring occasionally. Stir in shrimp and pine nuts and cook over medium heat til shrimp turns pink, about 3-5 minutes. Remove from heat and add in half & half, salt and pepper. Stir to blend thoroughly. Add mixture to cooked fusilli and mix thoroughly to fully coat pasta with sauce.
