Introduction

These delicious cakes work well as an appetizer or as a main with a salad. These delicious cakes work well as an appetizer or as a main with a salad.
Number of Servings: 10

Ingredients

    - 28 Triscuits (reduced fat) or other whole grain cracker
    -2 7.5oz/213gram canned salmon (well drained) - you can remove the bones or leave them in for calcium
    -1/2 sweet onion
    -1/2 red or yellow pepper (diced or minced)
    -2 Tbsp low fat or fat free mayo
    -2 Tbsp fat free sour cream or plain yogurt
    -1 Tbsp Dijon Mustard
    -1 Tbsp Lime Juice
    -1/2 tsp Worcestershire sauce
    Optional
    -1 Tbsp chilli garlic sauce or 2 tsp sweet chilli sauce with 1 tsp garlic puree
    1/4 cup finely cropped cilantro

Directions

1. Preheat Oven to 425 F
2. In a food processor, crush crackers. Set aside 1/2 cup for coating later
3. Leave the rest of the crackers in the food processor and add all the other ingredients and blend
4. Form into cakes - you can make 8-10 large or up to 30 mini cakes
5. Roll them in the cracker crumbs that you set aside.
6. Bake on cookie sheet or stone for 10 mins, then flip them and bake an additional 7-10 minutes
Note: if you do not have a food processor, the crackers can be crushed with a rolling pin and the ingredients can be mixed with a fork or in a blender.

Tip: Mix together fat free sour cream with sweet chili or garlic sauce for a yummy topping/dip.

Serve with a garden or spinach salad
