Ingredients
-
1.5kg stewing steak or chuck steak, cubed
4 cloves garlic
1/4 - 1/2 tsp chili powder
1 tsp cumin seeds
2 large onions, chopped
2 large red or green bell peppers, chopped
2 cans tomatoes (or 800g chopped skinned tomatoes_
250g cooked black or turtle beans (or two cans, drained)
Directions
Place the cubes beef in the crockpot (ensuring it is fully thawed first, fi you used frozen beef). Sprinkle the chili powder and cumin seeds over - you can adjust the amount of chili depending on taste preferences. Crush the garlic and sprinkle it over.
Chop the onions and bell peppers and put hem on top, then add the beans and pour on the canned tomatoes. Switch the crockpot onto low, and cook for about 10 hours. Beef is best when cooked for a long time at low temperature, so don't be tempted to give it a shorter time on high. No need to do any browning in advance. Extra portions can be frozen, and reheated later in the oven.
