    1 lb 14 oz yukon gold potatoes, washed and quartered
    2 tbsp salt
    water to cover
    2 tbsp light spreadable butter
    1 cup skim milk


place potatoes in pot with salt and cover with water. Bring to boil and boil until tender (15-20 minutes). Drain. Mash with milk and butter. Add pepper to taste. Makes 9 servings (1/2 cup)
