Introduction
Serve with whole wheat spaghetti/pasta. I usually do an OAMC type cooking, making a bulk batch of this in my crockpot. However, I also make it on the stove sometimes. Ingredients

Chicken Breast, boneless, skinless 1 lb ground (I grind myself)
Oats 0.5 cup
Egg beaters 1/4 c or 1 egg white
Tomato Sauce, no salt added, 1 cup
Diced, Peeled Tomatoes (No Salt Added), 14.5 oz can
Red Pepper, diced 1 cup
Onions, raw, 1 cup, chopped
Garlic, 1 clove minced
Olive Oil, 1/2 Tbsp
Balsamic vinegar 1 Tbsp
Italian Seasoning 2 Tbsp
Directions
Combine ground chicken breasts, oats and egg beaters. Shape into meatballs (usually 12 total). I usually Bake 350-375 F for 20-30 minutes until done. However, if I cook this dish in a crockpot, I'll add the meatballs raw. Either way works fine.
Saute the onions and garlic in the olive oil. I add the canned tomatoes here (or fresh if they are in season) and either cook them on the stovetop/crockpot until they are saucy or use my food processor to blend them, as we don't like tomato chunks.
Add red peppers, balsamic vinegar, italian seasoning and cooked meatballs. Cook for 15-20 minutes on the stove top or 4 to 8 hours in the crockpot.
