Ingredients

800gms chicken breast (no skin) cubed
1/4 cup lite cocnut milk
1/2 cup shredded coconut
Snow peas
red capsicum (bell pepper) diced
Cherry tomatoes Halved
red hot chilli pepper to taste
1/2 cup soy Sauce
1/2 cup lime juice
1 tablespoon sugar
4 serves egg noodles
Directions
Cook noodles according to packet and set aside to drain.
Stir fry chicken in two or three lots.
Add coconut milk and shredded coconut to chiken and stir fry until coconut starts to brown, remove from pan.
Combine soy sauce, lime juice, sugar and chilli in small bowl.
Add cooked noodles to pan, pour in sauce, add vegetables and combine well in pan then add in the chicken and combine. Serve immediately. Makes four large portions.
