Ingredients

    1 tsp cornstarch
    1/4 cup cold water
    1/2 cup sugar-free apricot preserves
    2 tbsp lite soy sauce
    1/2 tsp garlic, minced
    1 pound boneless beef sirloin steak, thinly sliced
    1 tbsp olive oil
    16 oz package of frozen stir fry vegetables

Directions

In a small bowl, whisk cornstarch and water until smooth. Stir in preserves, soy sauce, garlic and pepper. Set aside.
In a large skillet or wok, stir fry beef in oil until no longer pink. Add vegetables and stir fry according to package directions.
Stir apricot mixture and add to skillet. Cook and stir until slightly thickened.
Serve with rice.

    Bad
    I would have made an apricot sauce with fresh apricots and no sugar substitute. Leaves and aftertaste. Wont make again. - 4/19/07
