Introduction

This is the roux I make for my curries. You can use any curry mix, or mix of curries, my favorite is a mix I get from a local indian grocery store. You can pick up a jar at asian supermarkets, or online. This is the roux I make for my curries. Ingredients

    2.5 tablespoon
    6 tsp curry powder
    1/4 cup corstarch

Directions

Toss the curry powder into a dry frying pan, toasting until aromatic. Add cornstarch, mix, then add oil until completely incorporated.It should come out doughy, if it's runny add more cornstarch until its about the consistancy of hummus. Cool and add to your stews that you want to curry.
