Ingredients

1 clove of garlic
1 tsp grated fresh ginger
1 small shallot sliced into matchsticks
1 small carrot sliced into matchsticks
1 short piece of celery sliced into matchsticks
1 small bird's eye chilli. finely chopped
1 tsp vegetable stock mixed into
2 cups of hot water
3 slices cooked chicken breast
1 portion rice noodles
1 tsp oyster sauce
juice of half a lemon (or one lime)
Directions
Prep all vegetables.
Simultaneously in two separate saucepans:
1. Cook noodles according to pack directions. When they're done, strain, rinse and place in large soup bowl.
2. Bring the stock to the boil, add all vegetables and let simmer while you're preparing the noodles. Add chicken, oyster sauce and the lemon/lime juice. When chicken is warmed through, using a slotted spoon, arrange vegetables and chicken on top of the noodles. Pour the consommé over and serve.
