Introduction

Ingredients

    2 cups Jasmine Rice (or any other long grain rice)
    1 cup Lite Coconut Milk (such as A Taste of Thai)
    1 cup water
    1 cup Dole Pineapple Tidbits in 100% Pineapple Juice
    1/4 cup shredded coconut, toasted if desired
    2-3 tbsp cilantro, chopped

Directions

Add rice to pot and rinse with warm water until water is clear. Next add 1 cup water and 1 cup of coconut milk to medium saucepan or rice cooker.

Cook about 20-25 minutes or until rice is cooked through.

Once rice is done, add the 1 cup of pineapple, shredded coconut and cilantro if desired. Toss well and serve while still warm.

Serving Size: 1/2-3/4 cup

    Incredible!
    Made this tonight along with blackened salmon, the two flavors worked really well together. My rice, I used jasmine rice, ended up cooking a lot faster than the 20-25 minutes the recipe says, - 5/7/12

    Has anyone served this in a pineapple? I saw it once, and thinking I might try it. Wasn't sure if the pineapple would dry up and start to smell or anything like that! - 1/27/12

    Very Good
    This was pretty good. I had to add more water halfway through, and I added green onions and seasoning instead of cilantro. I will be making this again sometime. - 12/20/10

    Among the best rice I have ever had. I've gotten this at restaurants before and always found it too starchy- rinsing beforehand really seems to do the trick tho- it was a total crowd pleaser when I made this for my mom on mother's day! - 5/24/10
