Ingredients

    CRUST
    1 3/4 cups Oats, uncooked (quick or old-fashioned)
    1 1/2 cups Spelt Flour (can use wheat or white)
    3/4 cup Brown Sugar, packed
    1/2 cup Chopped Pecans
    1/2 tsp Baking Soda
    1/2 tsp Salt (optional)
    3/4 cups Butter

    TOPPING
    2 cups Blueberries, Fresh or Frozen
    1/2 cup Granulated Sugar
    3 Tbsp Water
    2 Tbsp Cornstarch
    2 tsp Lemon Juice

Directions

Heat oven to 350 F. Prepare 11x7-inch glass baking dish with cooking spray. Combine oats, flour, brown sugar, nuts, baking soda, and salt. Add butter and mix until crumbly. Reserve 3/4 cups of mixture. Press remaining mixture into the bottom of prepared dish. Bake for 10 minutes.

Meanwhile, combine blueberries, granulated sugar and 2 Tbsp water. Bring to a boil and simmer for 2 minutes, uncovered, stirring occasionally. Combine remaining 1 Tbsp water, cornstarch, and lemon juice and mix well. Gradually stir cornstarch mixture into blueberry mixture and cook for 30 seconds or until thickened. Pour over the partially baked crust base to within 1/4 inch of the edge of pan. Sprinkle with reserved oat mixture. Bake 18 to 20 minutes or until topping is golden brown. Coll on wire rack; cut into bars. Store in tightly covered container. Great warm or cold.
