These muffins are filled with apples, carrots, coconut, raisins and nuts. They turned out so well and taste wonderful. A great addition to a morning breakfast buffet. Ingredients

    1 C. White Flour
    1 C. Whole Wheat Flour
    1/2 C. Sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 C. peeled chopped apples
    1/2 C. shredded carrots
    1/2 C. raisins
    1/2 C. shredded coconut
    1/2 C. walnuts or pecans
    1/2 C. applesauce (unsweetened)
    1/4 C. skim milk
    2 tsp. vanilla extract
    2 large eggs (or equivalent egg substitute)

Directions

Combine dry ingredients first. Combine apples, carrots raisins, coconut and nuts in a separate bowl and add this to the dry mixture. Next combine applesauce, milk, vanilla extract and eggs. Add to the previous mixture. The batter will be thick, keep mixing until everything is moist. Fill greased muffin tin 3/4 full. Bake at 350 for 25 minutes. Makes 12 muffins.
