Introduction

Semi-homemade because I use store bought sauce. Not enough time to make my own usually. Semi-homemade because I use store bought sauce. Not enough time to make my own usually.

Ingredients

    1 pkg manicotti shells
    1 lb ground beef / turkey (using beef for this recipe)
    1 jar spaghetti sauce
    .5 cup grated parmesan
    3 cup shredded mozzarella
    2 cup part skim ricotta
    1 tbsp chopped onion
    1 clove garlic - chopped
    2 eggs

Directions

Brown meat in lg skillet with onion & garlic. After browning, turn heat down to low, and add 1 cup sauce. Simmer while preparing & filling manicotti. Mix cheeses & eggs together (set aside 1 cup mozzarella). Fill manicotti shells (use a small ziploc baggie w/ corner cut off for easy filling) and place in a lightly greased 9x13 baking dish. Only 14 shells will actually fit. Evenly spoon meat sauce over top, and then top with remaining sauce. Cover with foil and bake at 350 for approx 1 hour. Makes 7 2-shell servings.

    Very Good
    I've made something close to this for a long time now and love it. I don't bother with the eggs since it's fine without them and less calories. I add basil to the cheese mixture. I highly recommend this if you like manicotti - 7/13/10
