Introduction

Sodium can be GREATLY reduced by using homemade chicken stock and a bit of cream instead of the Campbell's soups, and season to taste instead of using our favorite seasonings. Ingredients

**3 cans cream of chicken soup
    4 c. chicken stock
    2-3 large potatoes diced
3-4 very large carrots diced (approx. 3 cups)
    1 c. chopped celery
2 chicken breasts w/o skin, diced
    1 1/2 c. corn niblets

    Season to taste, we use:
    1/4 c. Bacon Bits
    Seasoning salt
    Onion powder
    Pepper.

** We use low fat cream of chicken soup, but you could add more stock and some cream or half and half to thicken to a chowder consistency.

Directions

In slow cooker layer carrots, then potatoes along the bottom of the cooker. Add celery, broth, cream soup, bacon bits and seasonings. I like to pre-cook my chicken most of the way through to not get that watery drain-off in the soup, but if you don't want to then add chicken before soups.

Set cooker on low, and cook approx. 5 hours, stirring in the middle to get the flavors mingled.

Makes approx 10 1 cup servings.
