Ingredients

    2 large Portabella mushroom caps; fins & stem removed
    8 oz imitation crab meat
    2 pcs wheat melba toast
    1/8 C Eggbeaters
    3 Tbl Miracle Whip Light Dressing
    .5 oz Romano cheese, grated
    1 tsp lemon juice
    1 tsp minced onion
    .5 tsp Old Bay Seasoning
    .5 tsp dry mustard
    Paprika

Directions

Clean fins out of mushroom caps and remove stem. Set aside. Mix all other ingredients together well. I used my Magic Bullet to partially puree the "stuffing" mix. Place 1/2 of this mixture inside each mushroom cap. Top with a little Romano cheese and Paprika. Bake at 450 for 15 minutes.
