Ingredients

    4 oz uncooked pasta (makes 2 cups cooked)
    1 tbsp olive oil
    onions chopped
    1/2 green pepper
    1/2 red pepper
    1 tomato, sliced
    1 oz white wine
    garlic, mint, oregano, chopped
    lemon juice

Directions

Cook pasta according to directions on box. Drain and set aside.

In large skillet, heat oil, add garlic, onions, and herbs. Saute. Add tomatoes and peppers. Saute. Add white wine, reduce. Add part of lemon juice, then continue cooking. Add cooked pasta, heat through. Add remaining lemon juice, and mix well.

Makes 1 large serving (about 3 cups of food), or two slightly less large servings.
