Ingredients

    6 oz. frozen shrimp, chopped
    1 can Petite diced tomatoes
    4 oz. mushrooms, chopped
    2 celery stalks, chopped
    6 oz. frozen vegetables, chopped
    3 oz. frozen spinach
    1 Tbs. dried onion flakes
    1 Tbs. dry sherry (not cooking sherry)
    Garlic to taste
    Italian seasoning to taste
    Sea salt to taste
    1 oz. grated asiago cheese
    2 oz. whole wheat spaghetti

Directions

Mix all ingredients except spaghetti and cheese in skillet. Simmer for about 45 minutes.

Cook spaghetti according to package directions. (I break the spaghetti into thirds.)

Add cooked spaghetti and mix well. Add asiago cheese and mix well.

Makes 2 servings. (For smaller portions, this could also be 4 servings.)
