Introduction

This is something I kind of made up and experimented with - I love hummus and the spice of pepper but I also love the sweetness of sun-dried tomatoes. This is a great mix of the two. It works well on red pepper slices, celery and as a spread for turkey, chicken and tofu sandwiches. Ingredients

    Garbanzo Beans, 1 can, drained. Save liquid for later.
    Olive Oil, 2 tbsp.
    Garlic, 2 tbsp. minced or crushed.
    Sun-dried Tomatoes in Oil, 1 cup if julienned or 4 whole tomatoes, sliced.
    Crushed Red Pepper Flakes, 1 tsp.
    1/2 tsp. Cumin Powder, 1/2 tsp.
    Toasted Sesame Oil, 1 tbsp.


Directions

Drain garbanzo beans into a container, saving liquid. Put beans, olive oil, garlic, sun-dried tomatoes, crushed red pepper flakes, cumin and sesame oil into a blender. Mix. Add water from drained garbanzo beans to thin hummus as desired. This hummus is thick and spicy and will not reach optimal flavor until the day after it's made. Makes 10 servings, 2 tbsp. each.
