Number of Servings: 4

Ingredients

    1 lb - Shrimp, raw
    1/4 tsp - Salt
    1/4 tsp - White Pepper
    2 1/2 cups - Pasta; Whole Grain Penne, dry (Barilla)
    1 tbsp - Olive Oil
    2 cloves - Garlic, minced
    1/4 cup - Sundried Tomatoes, Julienne Cut (not in oil)
    3/8 cup - White Wine
    2 tbsp - Basil
    3 tbsp - Capers, drained
    3 tbsp - Parmasean Cheese, shredded

Directions

1) Devein & deshell shrimp.

2) Season lightly with salt and white pepper.

3) Cook Pasta according to package directions.

4) In medium to large skillet place olive oil, garlic, and sundried tomatoes and cook for 5 minutes.

5) Add shrimp and cook in this pan until done, 2-3 minutes.

6) Add Wine, basil and capers. Cook for an addition 2-3 minutes (till wine slightly reduces).

7) Combine shrimp mixture with the drained pasta, add parmasean cheese, and mix well. Serve.
