Ingredients

    1 cup onions, raw, chopped
    1 cup carrots, raw, chopped
    1 cup water (8 fl oz)
    1 cup barley, uncooked
    1 cube chicken bouillon
    2 chicken breasts w/ribs and skin (removed after baking)
    1 tbsp Thyme
    1 lime, medium
    Salt (to taste)
    Pepper (to taste)

Directions

Preheat oven to 350*F. In a medium sauce pan, combine onion, carrots, water, barley, and bouillon cube. Add salt & pepper to taste. Bring to a boil. Pour hot mixture into a 1.5 quart casserole dish or 9x9 baking dish. Arrange chicken breasts on top. Squeeze lime juice on top of chicken. Sprinkle Thyme on chicken.

Bake, covered, for 50-60 minutes, until barley and chicken are tender.

When it's done, I usually remove the skin and ribs, and cut the chicken up into the barely & carrots.

Makes about 3-4 servings, depending on how much you eat.

    I would assume you are using pearl barley which requires a 2:1 ratio of water to barley...your recipe is too dry and ruins the barley. Also using boneless, skinless breasts is alot easier - 1/31/08
