Ingredients

Atlantic Salmon Fillets, 6 oz.
1 Tbsp Extra Virgin Olive Oil, divided
Juice of 1 Fresh Lemon
Kosher Salt (optional) and Fresh Ground Pepper to taste
1 Clove Fresh Garlic, thinly sliced
1 Tbsp Fresh Grated Ginger Root
2 Plum tomatoes, sliced
1 Tbsp Capers
Directions
Preheat oven to 375 degrees. Rinse and pat dry salmon fillet with paper towels. Pour half of the olive oil into the bottom of a small baking dish, and place the salmon skin side down in the dish. Sprinkle top of fillet with lemon juice and brush with the remaining olive oil. Season with salt (if desired) and pepper, and top with sliced fresh garlic and grated ginger root. Arrange tomato slices on top to cover the entire fillet, sprinkle with capers, and bake for 20 to 25 minutes, or until fish is easily separated with a fork, but not dry.
