Introduction

I was winging it. Had a craving for fresh zucchini and sliced onions and then remembered I had fresh sliced mushrooms in the fridge, too. A dash of this, a splash of that, and VOILA! It was pretty tasty... the whole family liked it!! I was winging it. Had a craving for fresh zucchini and sliced onions and then remembered I had fresh sliced mushrooms in the fridge, too. Ingredients

    5 zucchini, washed and cut into wedges lengthwise
    1 yellow onion, peeled and sliced
    2 c. sliced fresh mushrooms
    1 T. white wine for cooking (I used Holland House brand)
    1 T. Mrs. Dash, Garlic and Herb
    2 T. water
    Fat-free Olive Oil Cooking Spray

Directions

Wash and slice the zucchini. Then peel and slice the onion. Place in a large skillet or saute pan coated with fat-free olive oil spray. Add two cups of sliced mushrooms, the Mrs. Dash, the white cooking wine, and the water.

Stir to coat vegetables with seasonings and cover. Cook until veggies are tender to your liking. Stir vegetables occasionally as they cook.
