Number of Servings: 6

Ingredients

    1 Tbsp light butter
    1 onion, diced
    2 cloves garlic minced
    1 can condensed tomato soup, low sodium
    1 can chilli style diced tomatoes
    1 can corn, no salt added, drained
    1 can black beans, drained and rinsed
    1 can vegetarian vegetable broth
    3-4 chipotle peppers, seeded, and finely chopped (like a paste)

Directions

Melt light butter in a dutch oven or large pot. Saute the onion until translucent. Add the garlic and saute 1 minute more. Add the drained corn and saute 1-2 minutes. Add the soup, tomatoes, black beans, and broth. Bring to a boil. Simmer for 10 minutes. Add the chipotle peppers/paste. Simmer for 5 more minutes.

I like to puree about half of the soup for a more liquid consistency. Top with fat free sour cream, reduced fat cheese, and/or crush tortilla chips.

6-8 one cup servings
