Ingredients

    2 T vegetable oil
    1 stalk celery, chopped
    1 small onion, chopped
    1 carrot, chopped
    1/4 cup parsley
    1 pound leftover sliced trkey
    1 1/2 cups mashed potatoes
    1 1/2 c bread crumbs
    few pinches of nutmeg
    salt and pepper
    1 egg, beaten
    cranberry sauce
    gravy

Directions

Heat 2 T of oil in a skillet over medium heat. Add celery, onion, carrot and parsley and cook until soft, about 5 minutes. Let cool
Heat 1/4 inch of oil in skillet over medium high heat. In a mixing bowl, shred leftover turkey using 2 forks. Add mashed potatoes, 1/2 cup breadcrumbs, poultry seasoning, nutmeg, salt and pepper, egg and cooled vegetables. Combine to form 10 patties. Dredge patties in remaining breadcrumbs and brown in 2 batches. Drain on paper towel. Serve with cranberry sauce and gravy.
