Introduction

This recipe has always been one of my favourites and I was very happy when I realized it fits with a low fat or low carb diet! The fat content and calorie content could be lower if you substitute fat free cream cheese and lower fat cheese :o) This recipe has always been one of my favourites and I was very happy when I realized it fits with a low fat or low carb diet! Number of Servings: 4

Ingredients

    - 1/2 tub or cube of low fat/fat free plain cream cheese
    - 1/2 tub light garlic and herb cream cheese
    - 1/2 pkg (approx 12 large pieces shredded) imitation crab meat
    - 1 cup regular or light shredded cheddar cheese
    - 16 large "stuffer" mushroom caps (stems removed)

Directions

1) Preheat oven to 350 degrees
2) Cream together both cream cheeses
3)Add shredded crab meat and cheese
4) Mix together well.
5) Wash mushrooms and remove stems
6) Stuff caps full with filling
7) Place on broiler pan (or baking sheet)
8) Bake 30 minutes, if tops not browned broil for 2-4 additional minutes

Makes 4 - 4 mushroom servings (16 caps)

Leftovers (if there is any) are great on whole wheat crackers or stoned wheat thins.

    Very Good
    My kids thought this was incredible!!! I made them in 4 portabelo mushrooms instead of 16 of the regulars and I add spinach and green onions just to get them to eat more veggies. Very, Very good...will be doing this one again soon!!! Thanks. - 1/7/09
