    4 oz chicken breast
    2 small zucchini
    1 medium squash
    1/2 cup tomato sauce
    1 tbsp extra virgin olive oil
    dash salt
    dash pepper
    dash garlic powder
    dash italian seasonings
    dash dry parsley


1. prepare zucchini and squash noodles using a zester or peeler depending on what size noodles you want until you have about a cup of noodles.
2. Grill the chicken breast (I use a george foreman-juicier and quicker)
3. While chicken is grilling, heat skillet over medium high heat with 1 tbsp extra virgin olive oil
4. Add zucchini and squash noodles to the skillet
5. Saute about 3-5 minutes tossed with all the seasonings listed including parsley
6. Add 1/2 cup tomato sauce to the noodles
7. Let simmer about 5 minutes until bubbly
8. Pour over chicken breast add a sprinkle of mozzerella cheese on top if desired.

    This was wonderful! I love zucchini noodles and this kept them nice and crisp. I added a handfull of mushrooms and left out the squash because the 2 zuchinni made plenty of noodles - 8/8/10
